We made some pasta last night. For lunch I decided to spruce it up a bit. I checked out what I had and decided to throw it all together to make this meal. It is a simple and quick meal to put together even if you want to do it from scratch.
- 1 cup cooked pasta
- 1 onion, chopped
- 1/2 cup cherry tomatoes
- 1 cup of Sukuma wiki (kale), roughly chopped
- 1/2 cup coconut milk
- 2 tablespoons Olive oil
1In a pan, heat up the olive oil then add the chopped onions. Sauté the onions until golden brown. Add the chopped Sukuma and stir until the Sukuma is slightly cooked.
2After about 2 minutes, add the cooked pasta and stir it in with the greens. You can also add some spices if you are into that. I used a teaspoon of royco.
3Add as much coconut milk as you’d like. Let this simmer for 3 minutes. Just before turning off your stove, add the cherry tomatoes in whatever cut you prefer. I always cut mine in half. Serve.
