I love how this cake turned out. This is one of the easiest cakes you can ever make and it doesn’t take a lot. I had left over frosting after I made some cupcakes and that is how I decided to make this cake. I wanted something that would be a one off instead of something that required refills, like cupcakes. I also wasn’t feeling well so I wanted something that would be fast. You should try this whenever you can. It is super spongy and tastes amazing.

Ingredients

  • 1 ¾ cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 cup almond milk (or any non-dairy milk)
  • 1/3 cup vegetable oil
  • 1 tsp white vinegar

Directions

1Preheat the oven to 170°c (350°f). Grease two 7/9 inch baking pans with some oil. Lay some baking paper in the pans and set them aside.

 

2In a mixing bowl, sift the all-purpose flour. Add sugar, baking soda and salt. Mix until well combined. In a jug, mix the wet ingredients. The almond milk, oil, white vinegar, vanilla essence.

3 Add the wet ingredients into the dry and mix until well combined. Do not over mix. Divide the batter between the two pans.

 

4 Bake for 30 minutes. Use a toothpick to confirm the cake is ready. Insert a toothpick and if it comes out clean with no batter, remove the cake from the oven. Let it cool.

 

Frosting & Decoration

I use vegan whipping cream that is made out of soy when I go for the store bought one. Other times I use coconut cream to make my frosting. I will share a video/recipe on this soon.

Ingredients

    • 3/4 cup whipping cream
    • 1/3 cup powder sugar
    • Strawberries
    • Raspberries
    • Confetti candy

Directions

1Leave a glass bowl sitting in the freezer for anywhere between 30 minutes to 1 hour.

 

2Pour the whipping cream into the bowl and start whisking. Whisk while gradually adding powdered sugar until the frosting can hold a peak. You can also do it to your desired consistency.

3 Apply some frosting to the bottom of your cake stand and attach the first cake. Layer frosting over it and add some of the raspberries and strawberries then add more frosting before layering the last cake.

4Frost the top and sides of the cake as desired and it is ready to serve. I added some of the left over berries to the sides and threw some rainbow confetti candy on top to add color.
