If you haven’t noticed by now, I am crazy about sprucing up left over food. We had some left over rice and last night I decided to experiment a little and the end results were awesome. This peanut rice is tasty and looks really good.

Ingredients

  • 3/4 cup peanuts
  • 2 cups boiled rice
  • 4 cloves of garlic
  • 2 tsp cumin seeds
  • 1 tbs tomato paste
  • 3 tbs macadamia nut oil
  • 1 tbs olive oil
  • 1 onion chopped
  • 1 tbs light soy sauce
  • Paprika
  • Ground coriander

Directions

1In a pan heat the macadamia and olive oil. Add the onions and let them cook for a while then add the garlic and cumin seeds. Cook until golden brown then add the peanuts. Stir every so often to avoid burning the onions.

2Add the tomato paste, soy sauce, paprika, ground coriander and little bit of water. At this point you can add spices you like. I added 2 royco cubes to my mix. Stir and make sure everything is combined. Let this cook in low heat for about 2 minutes.

3Make sure the stove is on low heat as you add the rice to the pan. Add the rice in potions as you stir it to combine with the ingredients in the pan. After you’ve added all your rice, keep stirring until the rice is now hot. You can choose to add some fresh coriander before serving. I didn’t have any, so I went ahead and served my rice.
