I can be a sweet tooth when in the mood. As much as I am not crazy about sugar, I like having snacks in the house especially for Nick. These simple chocolate chip cookies can be served with some vegan yogurt or a smoothie.
- 2/3 cup brown sugar
- 2/3 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened Vanilla Almond milk
- 2 ½ all purpose flour
- 1 tsp vanilla essence
- 1 tsp baking soda
- 1 tsp baking powder
- 1 ½ cups vegan chocolate chips
1Heat the oven to 170°C (350 ° f) and line your cookie tray using some parchment/baking paper. Set this aside. In a bowl, mix the vegetable oil, sugar, vanilla essence and almond milk.
2Stir the flour, baking powder and baking soda until dough forms. Drop in the chocolate chips and fold them into the dough. Using a spoon, scoop out the dough and shape it into round balls. Place them on the baking sheet 2 inches apart.
3Bake for 12 minutes or until the edges of the cookies turn golden brown. Remove from the oven and place on a cooling rack. Once completely cooled, store the cookies in an air tight container to retain their chewy nature.
This is one of the simplest recipes I have ever tried. The cookies are nice and tasty as well as very chewy. They were such a hit that we finished them in 2 days. This recipe made 30 cookies but you can make more if you reduce the amount of dough per scoop before baking. I hope you will try this and if you please tag me I would like to see your creation.
