This pasta recipe is so good it does not need to be paired with anything else. The burst of flavors in your mouth will make you want more. I love it so much, I purpose to have it as often as I can. You should definitely try it. If you can accompany it with a smoothie, the experience is elevated.


  • 1 pack penne pasta
  • 2 tbsp virgin olive oil
  • 2 chopped onions
  • 1 tsp salt
  • 1 tbs tomato paste
  • 3 crushed tomatoes
  • 2 spice cubes
  • 1 chilli cube
  • 1 tsp black pepper
  • 2 tsp ground coriander
  • 1 can coconut milk/cream
  • fresh parsley (optional)


1Boil water and add your pack of pasta. Follow the directions on the pack since each brand is different. For this pack it cooks in 7 minutes. Drain the pasta and rinse with running water. Boil some water and add the tomatoes. Let them sit until the skin can peel off.

2In a sufuria, heat the olive oil and add the onions. Cook until the onions are tender and browning then add the crushed tomatoes. You can also blend the tomatoes to make them smooth. I prefer this but I broke my blender 😭😭😭 Cover and cook for about 2 minutes.

3Add tomato paste, spice cubes , chilli cube, black pepper and coriander. Stir until everything is combined. Add the can of coconut milk and mix in until combine. Let this simmer for 2 minutes or until it bubbles.

4Add the drained pasta to the coconut mix and stir until everything is combined. You can add fresh parsley or coriander just before you serve. Serve while hot. Drizzle some nutritional yeast for some extra flavor.
