Oatmeal is my favorite when it comes to breakfasts. Super diverse and you can have it so many different ways. This is one of my easiest and quick fixes especially when I have a lot to do. You can decide to cook the oatmeal over the stove or throw it in the microwave for a couple of minutes.

  • 2 ripe bananas
  • 3/4 cup oats
  • 1 ½ cups water or non-dairy milk
  • Almonds
  • Raisins
  • Cinnamon
  • 1 tbs sweetener
  • Chia seeds
  • Chocolate shavings

1In a pan, add the oats, water, chia seeds, one banana, cinnamon and almonds. Cook the oats over the stove on low heat constantly stirring. Keep at this until the oats have soaked in the liquids and cooked to your desire.

2If you want to use the microwave, mix the above ingredients in a bowl and cook in the microwave. Let the oats cook for 2 minutes, remove and stir then cook for 2 more minutes.

3Once ready, pour into a bowl and add your desired sweetener. Agave, maple or honey will do. Add the chocolate chips (chunks) and raisins then mix this well. I also like to add a couple of tablespoons of my soy yogurt to keep the oatmeal creamy.

4You can now add your toppings and this is where you have fun with it. I like using fruits and nuts. Just have fun and experiment.
