Quinoa can be a bit bland in my opinion and as I have mentioned a couple of times, I am crazy about flavor. I decided to try and add awesome taste to this quinoa and it turned out great. I am still playing around with quinoa and more flavors will be coming your way.

  • 2 tbs Olive Oil
  • 1 large Onion
  • 2 tomatoes, chopped
  • 1 tbs tomato paste
  • 2 stock cubes
  • 2 cups water
  • 1 cup Quinoa, rinsed

1In a pan, heat the olive oil then add and sauté the onions until they are golden. Add the tomatoes, stir and cover until the tomatoes are completely cooked.

2Stir in the tomato paste and once combined, crush the stock cubes and if you want to experiment with other spices you can. I added a dash of paprika. Add the water.

3Don’t wait for the water to boil before you add the quinoa. Rinse the quinoa before adding it. The easiest way to do this is to pour the quinoa into a large sieve then run tap water over it. That works fine for me.

4Cover and let this cook over low heat for ten minutes, then stir it. Cover it and let it cook for another 5 minutes. If it isn’t completely dry at this point, turn off the stove and use a clean kitchen cloth to take in the rest on the steam and water. Just place the cloth over the sufuria and place the lid back on.
